What's the best choice throughout the game?
Humanoid / Orc?
Then you get a small bonus on Humanoid / Elf and Humanoid / Human (thieves and bandits and such), and a large bonus for the Prides.
Of course, it's very possible to switch it around, which is what I actually do when I play Cursed -- trying to guess the boss, and being a Predator for the boss's type through the dungeon.

Undead/Vampire first half(Skeleton is also an option, it depends on if you prioritize random enemies over The Master), Humanoid/Orc in the latter half, yeah.

Yeah, skeletons are heavily represented in the early game.

I'd guess Dragons, but that's just guessing.

Barely matters.
It's a ratio thing; You always get +21 stats(assuming capped Mimic), and the statistical bonus is far less important than the actual damage bonus you get to the chosen type/subtype.
As long as you're not killing mages, it's generally fine. Even if you are, it tends to only be four or five stat points lost to Magic, temporarily...

I haven't seen mimic give more than +5 on a stat.

The distribution is based on the distribution of the stats of the enemy you killed. But it's always taken out of a pool of 21 points(assuming capped, again), and it always applies all 21 points.
So generally 5/6 is top for a single stat.
