When you attempt to customize a Doomelf with redhead, it changes your player tile to be a Shalore... or Thalore maybe.

Aside from the hair they are the same, so take your pick. A redhead of either elven race should look the same. The dolls are very simple, so when you choose the cosmetic hair color it is replacing the entire doll, not just the hair. So far as I know, there is no redhead doll for Doomelf (meaning one with horns and dark skin); it counts as an elf, and they all share one redhead doll.
