I believe the idea behind the name is that you manipulate probability to let you pass through walls; there is a theoretical but realistically impossible chance that all of the molecules of the wall could happen to move out of your way at exactly the right time or whatever, and you manipulate it to make that happen.

(Or maybe it's just a reference to the Infinite Improbability Drive...)
