ToME: the Tales of Maj'Eyal

So I've recently lost one of my most viable insane/roguelike run due to the NPCs taking a ton of turns in a row without handing control back over to the player. This is not the first time that this happens, but this time was the most glaring as they took a long time to kill me. What could cause such a situation and how could I better protect myself? Is it a bug or are the opponents using skills which prevent me from attacking for multiple turns?

Normally player turns are separated by an empty line, and in the clip I have to scroll for quite some time before reaching that point. None of the skills used against me in the log should have locked me down for so long right?

If you moved at all before you died then that might be why the Cursed boss took multiple turns over you. Moves in the temporal rift take 3 turns to complete.

There are unfortunate ways to lose turns. e.g. forced movent from "Beckon" or a combination of "Confused" and "Instill Fear:paranoid" effects. In temporal rift use items with mental shielding or Rod of Spydric Poison on your character before any of above effects land.

It would be great to allow the player to see what is going on during those turns even if he cannot act (like when he is under the effect of a sleep effect), but I assume that might make them too easy to deal with (with instant cleanses or such).

It wouldn't. You can't use an instant cleanse if you don't get a turn.
