Seems like a dumb question, but what all can be done after winning the main campaign?

There are some secret/hidden bosses in the west after you go to the east, each with a chance to drop a special unique item.

These are available as soon as you return to Maj'Eyal from the Far East, well before winning the game. In fact, it is a good idea to visit and kill any of them you can - it's one free artifact (or randart) from each, and the experience amounts to two or three levels total.
