Says is a spell or is a wild gift/etc. unless explicitly stated, that is. If it uses weapon % damage, then I believe it's physical crit.

Okay, so I understand that direct heals and shields can crit, and direct damage. I believe I heard that DoT area cloud effects don't crit: What about instantly-applied dots like diseases? I heard somebody say that Anorithil circles can crit for duration. Is that the duration of the circle itself, or of debuffs it applies? What else can crit duration?

Usually there is no indication, but you can safely assume all direct/one shot damage can crit.
I'm not sure why most timed effects don't crit, as the code wouldn't be any different from other things that crit.

It depends on the talent's author. For example, Bathe in Light CAN crit, despite technically being AoEDoT. Flame, being DoT, can crit. Some things cannot, but they are actually quite rare.

And some talents can crit multiple times. The Anorithil circles roll a crit for the duration and another for the power level of the circle or something.

I believe I have heard that most dots can crit, but only the initial tick gets multiplied.
Or maybe that was something else...

The whole idea of "crit for duration" throws me. There are zero tooltips anywhere explaining that that's a thing that can happen, nor does it happen in most games. Is it +50% duration or +% crit damage duration? What effects roll it?

Some of the Wyrmic talents are mind powers AND do weapon % damage (Ice Claw, Wing Buffet). Do they use physical or mental crit then?

They use physical crit, but the multi-hued claw attack may use physical crit for the weapon attack and mindcrit for the elemental burst. I'm not sure the elemental burst can crit at all, but I'm pretty sure it uses mindpower.
