If so will I lose stats on the weapon? will they be replaced or will the gem just add on to them?

Affinity(heal) 20%, means that you will take for example 10 damage and after you will heal back 2. Note that you can die if that damage is lethal as the heal occurs after.

Imbuing a gem adds the effects to the item. I think one or two may have different attributes when imbued, but it will be shown in the tooltip.
