Sun infusion close to escort.

Will a sun infusion make him angry and fizzle the task?
If not, can I blind him to let him stagger in a corridor so I can run forward and clear space?

No, it won't. In fact, I'm not sure that blinding ever counts as aggressive.

Nothing you can do as a living being will make the escortee hate you. For example, if you use Nature's Touch to heal him, and then hit "Shield Pummel, Enter" when you're next to a monster, but the game kept focus on the escortee, and you end up shield pummeling the escortee... he won't get angry.
But I've heard that if you are undead and you remove the cloak of deception, he'll become aggressive toward you. Haven't confirmed it through play, though.

Blinding/harmlessly incapacitating escorts seems to be a pretty good strategy.
