Thalore can have 25% res all. Solipsists can get 8% res all from summon for 33% total. THere are weapons with up to 8% res, and mindslayer can wield up to three weapons. A lot of late-game gear gives res to many major elements.Premonition and that first AM talent (Relentless?) give ~20% res to last enemy damage, depending on stat.
So, by mid-game you can have 50-70% to one element of choice, and by end game 70% if not to all, then to most dangerous elements (fire, blight, cold, lightning).

I think there are a few simple rules you can follow to help you survive:
Early game you can save a few equipment pieces for specific zones, like lightning resistance rings for Daikara.
Get enough Con for HP and Thick Skin. Get plain bonus HP from equipment.
Focus on the important resistances! Darkness and Light damage is rarely used against you. Same goes for mind damage. There are few spells that deal acid damage and even less enemies using them. The 2 most important resistances in the second half are probably fire (very common damage type with good damage) and blight (extremly high burst potential), followed by lightning and cold as common but not that threatening spelltypes.
