I had to kill one with Acid Blood... it wasn't pretty. 100% resist to Darkness, Physical, and Blight.

Just carry a swap weapon with elemental/light/darkness damage like Wintertide or an elemental weapon of choice or a staff...

I've actually never found an elemental weapon, and the times I'm late game with a melee style class I don't find good x damage type weapons.
