I'll start with armor and defense. Before an attack hits the attacker's "Attack" is compared against the defender's "Defense". A higher defense will increase your odds of having melee (and ranged in the case of "Ranged Defense") attacks miss you completely. I'll skip the exact algorithm unless you want to know it. Armor is how much damage from an attack that hits you is ignored.
There is another thread looking into renaming the resists to make them more clear, but basically they are used to determine if a talent affects you. For example, near the end of your log you see:
