It might be fun to be able to transform your Ogre into a Krog or transform your Orc into a Kruk Yeti. Even Shalore->Doomelf could be fun, though that would indeed necessite more of a workaround.
The lore is already there, so why not just give a choice, if picked giving a deletion of the old category and regaining of the invested points and yeah. Maybe adjust the base stats according to the difference of the races. Could be fun.

However, what about racial quests? Or tidbits like how turning into a Kruk Yeti would probably remove all of your past knowledge?

I understand the perspective you're suggesting and this might be fun for others, but seriously: Kruk Yeti and Krog are examples where you shouldn't do this. This is supposed to mostly be a cool thing to do, rather than something that is actually powerful. I guess with Krog it'd be sorta okay from a lorewise perspective, but even there it's questionable.
