You can see my kill stats to see how much I hate the Mummy Lord, so I may just be a bit biased... I'd think he'd be stopped mid-Assault if he was frozen during multiple strikes:

I use shield abilities all the time, and I wouldn't think it unfair if my latter attacks were stopped midway for being frozen... but I haven't met a monster that freezes me when I hit it. My Sun Paladin has magic as backup if that were to come up, but that's probably not true for every melee class...
