As suggested in IRC regarding rat/mice:
Give them a stacking debuff whenever they hit you/die. The debuff increases the damage you get from mice and acts as a low-powered dot. Some of the rats will spawn as different kind (such as crystal rat) shooting you over the other rats, with bonus damage based on the debuff. Giving them stealth while surrounded by other rats could be interesting.
Rabbits and foxes- instead of simply removing them, turn them friendly.
Rabbits does.. pretty much nothing. If you do aggro them, though, they are simply annoying bitches. Low damage, high evasion/mobility. Just to annoy you for hitting them till you get them down properly (will not count against other monster's spawn).
Foxes are friendly as well, and will chase rabbits. If they see you fighting and there are nearby small critters (molds, ants, worms, spiders, rats etc.) they will attempt to help you (the enemy will still prioritize you, though. Foxes are small fry). If they do manage to grab kills, they steall your exp.

Re: Improving Trash Enemies
Ooh, I really like the friendly animals idea. "Predators" and "Prey" factions? ^.^
