When undead use the blood of life, a small part of their body becomes alive enough to inscribe an infusion on it. Still not enough to give them a second life though.
Either:allows the character to learn one infusion (ever)
Or: allows the character to have a maximum of 1 infusion at any time.

It's not a terrible idea. But given how in 1.6 runes and infusions are getting overhauled, I'd like to see what we're looking at before saying 1 infusion would be an improvement to undead across the board.
