Overwrite the hotkey for runes/infusions of same type
When I use a new wild infusion, and replaces the old one, can we make it keep the hotkey of the old infusion/rune?

No... What happens is:
One gets removed, the hotkey is removed, and then, the newest one is added to the first available hotkey in the list, which if you didn't customize your hotkeys would be the one that just opened up.
But if you're like me, and move your runes/infusions to shift 1..5, then it always finds a spot between 1..ctrl-= that is open before that one.

It only does this if all of your hotkeys are filled up. If you have an open hotkey that is lower in number than the infusion you just removed the new one goes to this lower position.

Ah, sorry, I didn't realise since I always have them on 1-5!
