I only play on Roguelike. Yeah, it gets a little harder to win in every version, but I consider it a good thing. ToME is kinda easy with only a few major spikes in difficulty.

Nethack is hard, until you reach the castle. Once you get the wand of wishing the game becomes very easy, until you reach the final dungeon.

Crawl isn't very hard, if you know when to flee. The final dungeon in Crawl was easier than Nethack's for a long time (you could easily steal the MacGuffin and flee the dungeon), but the post-endgame content (the demonic planes) is a bit harder.
