One of the elites that spawns from a coffin, is a lvl 35 and has resist all 60% and a few other resists on 60%, including 68% resist physical.....
I'm playing a rogue. Physical damage for days.
It has just over 1700 life and even though i can crit things for up to 700dmg, on average i hit this thing for 20-40.
But wait, there's more.
You may or not be thinking "you could eventually get it down maybe, you just need good sustain/resources" and you'd probably usually be right - I've gotten it down to 84% or so life (Flurry with lvl 5 Expose Weakness, levelled just for this fight) and within a turn or 2? It's back up to 100% health.
It also has a shield, that or may or may not be behind its healing.
When i say shield you may be wondering if i'm talking about an actual equippable shield, or magical shield. Let me straighten that out for you - it has both. So when i'm not doing 20-40dmg, i'm doing 0 on a magical shield and probably 0 when it's inevitably blocking, etc.
So it has 60% resist all, 68% physical damage resist, a one hand and shield, can cast a magical shield and can heal a 3rd of its health every so often.
On the bright (but mostly dark still) side, i can kite it down the corridor to a room near the boss door and fight it there every now and then because it doesn't do the highest damage. If i'm still unable to tackle it (will i ever be able to?) i can use all my rogueish tricks to get back to the entrance and get out again.
I say a room near the boss door and not just near the boss door, because did i forget to mention? It also has a long range pull, but of course not just any old pull, certainly not with everything else this walking swiss army knife has, a pull that leaves fire in the entire line it shoots out and nabs me from that i now need to run over to get back to the entrance and get out. Since he has a long range pull i need to use Rush, Movespd Inscript and Tumble, to get far enough away *after* it's used it's pull on me.
I couldn't make this up if i tried.

Bone Giant uniques aren't the actual worst, but they're up there. If it makes you feel better, you used to have to kill bone giant rares TWICE, since they resurrected after you killed them the first time. I recommend more points in Expose Weakness, which is Rogue's answer to high-resist foes.
EDIT:
Didn't notice you 5/5ed Expose Weakness. Its possible your build is somehow gimping your damage, but its equally possible that this is just a rare you can't kill. Its worth noting that you can Rod of Recall out of Last Hope Graveyard even after the stairs disappear.
ANOTHEREDIT:
The shield and heal both have longish[10+ turns] cooldowns, so there's a window after its used both where you can potentially kill it. Probably won't help you since your damage isn't strong enough to seriously hurt it in the first place, but its worth considering.
Something else to consider is using Dirty Fighting's resistance lowering to land a good stun on it, which will make the fight easier. Once again, might not be enough to kill it, but it'll still give your offense and defense a step up.

I 100% believe you about bone giants, having to kill one twice? Just plain broken. This one was also an elite, not rare. I literally just died to a different one (it's also telling how you knew that it turns out the enemy is a bone giant, too, lol) in the halfling hideout. This time though it was a Rogue. The crazy tankiness/heal/sustain of a (bone) giant enemy with the damage of a Rogue. I had a 300 - 400 shield up, almost 700 life and it one-shot me lol.
Turns out he hit me, took my shield off, then got to have another attack, using flurry (which also crit, naturally) and flurry being the Rogues 6-hit crazy high damage attack, then a skeletal warrior next to him hit me and also happened to manage to crit, but:
I then cleared the mobs around him (with great difficulty and another life lost since they were all in the stairs-down room, so i didn't have much room that was safe to work with as a Rogue. An Elite bone giant rogue and a group of enemies spawning in the very first room of a floor of a dungeon OP) but then get one-shot by him again, this time just him.
I'm guessing by another double attack + crit flurry.
Also the bone giant from the graveyard doesn't just have a 10 turn heal and shield, he has:
Reassemble - 660 life heal (3rd of his life)
2 different stuns - ("Shield Pummel level 5" and "Stun level 4")
Bone Armor - 585dmg shield, lasts for 10 turns
Block level 5
Hardened Core 3 - increases total armour by 49% + 10
Osmosis Shield - Heals for the first points of all damage you receive (based on shields block, currently 56) That effect also apparently stacks, naturally.
Wraithform 3 - increases defense and armour by 17 and 14
Has the shield equipped, with 136 block
60% resist all
68% phys resist
Thick Skin 3 - further 10% damage resist
103 armor
85% armor hardiness
Heavy Armor Training 6 - increases armor by 12 and hardiness by 55% (not sure if that's already factored into the above)
And immune to almost every physical status effect (100%) except disarm (25%)
10 turn heal and shield? No problem. All of the above including the crazy high resistances, armor, hardiness and damage reduction as well as a shield that has level 5 block while having 2 stuns and almost complete physical status effect immunity on top of a 40% heal and magical shield that lasts for 10 turns? :p
(elite) Bone giants OP....
