I'd like to fiddle with new classes but I'm not sure I want to see them on enemies, so I was wondering if people knew offhand which created classes don't add to the talents that can be randomly generated on enemies.

All of mine have a setting that you can use to disable the new categories on NPCs.
However, that doesn't work for the few tweaked existing talents. (That would just be too hard to code.) However, those can usually be turned off as well.

I konw add a new line [not_on_random_boss = true] into data\birth\classes.lua,then rare or boss enemy wouldn't randomly generat with this class,also the new talents. I'm not sure,try it maybe.
